The Modern Stone Age Kitchen is a sourdough bakery, scratch-made restaurant, and community hub in the heart of Chestertown. Founded by Dr. Bill and Christina Schindler, our mission is simple: take familiar foods people love and prepare them in ways that are deeply nourishing, rooted in traditional techniques, and connected to local agriculture.
Everything we make – from our wild-fermented sourdough breads and pastries to our wood-fired pizzas, broths, sandwiches, and ferments – is created 100% from scratch. We use ancestral processes like long fermentation, nixtamalization, nose-to-tail butchering, and cultured dairy to maximize nutrition, flavor, and digestibility. We also work closely with local farmers and producers to highlight the best ingredients Maryland has to offer.
Beyond the kitchen, we are home to the Modern Stone Age Food Lab, our educational nonprofit where we teach classes, host school groups, run internships, and share research on how to reconnect with real food. Together, the Kitchen and Food Lab have become a place where families, visitors, and the Chestertown community can learn, eat, and gather around food that’s made with intention.
